Recipe: Taco Casserole

We have tacos at lot at our house but sometimes I like to change things up a bit and have maybe a taco salad or taco casserole. Both are a big hit at my house. There are so many different ways to make a taco casserole but here's the recipe I use if you want to try it out. However, you can layer your taco casserole any way you like or add and/or subtract ingredients according to what your family likes. That's what is so great about casseroles!



Ingredients:
  • 1 bag of Doritos (or you can use tortilla chips)
  • 31 ounce can of refried beans
  • 16 ounce container of sour cream
  • 8 ounce bag of shredded nacho and taco cheese 
  • Approximately 2 pounds of hamburger
  • 2 - 1.25 ounce packages of taco seasoning
  • Approximately 1/4 onion, chopped
  • Black and/or green olives, whole or cut in half
  • Taco sauce and/or salsa if desired
Directions:
  1. Preheat oven to approximately 325 to 350 degrees.
  2. Cook hamburger and chopped onion in pan until brown and drain grease. Add both packages of taco seasoning to mixture.  
  3. Warm refried beans on stove or in microwave.
  4. Layer bottom of 13 x 9 inch casserole dish with chips.
  5. Spread warm refried beans on top of the layer of chips.
  6. Spread sour cream on top of the layer of refried beans.
  7. Add meat mixture on top of the layer of sour cream. 
  8. Add another layer of chips and top with bag of cheese followed by olives.
  9. Bake in oven for approximately 30 to 45 minutes or until cheese is melted.
  10. Serve topped with salsa or taco sauce of choice if desired.
